Re: Having a heart condition:
"I ended up having pericarditis which when the lining of the heart fills with fluid and then ends up, you know, getting kind of hard; feels like a basketball swelling in your chest, and it could lead to serious complications like heart disease and, you could have a heart attack and me being, you know, as big as I am, definitely a danger sign. So when the doctor went ahead and told me I was done, it just like, you know, I could have died right there."

Re: How is his health now?
"You know what, I'm feeling pretty good. I hired a trainer when I left Hell's Kitchen and in preparation to have the gastric bypass. I'm going to have that right before the winter season, and lost about 50 pounds just working out, can't always turn down the Twinkie but it's a lot easier now knowing that you know, you don't want to deny yourself anything. I just, you know, try to do better."

"I'll tell you what, dealing with Chef Ramsay is like playing one on one with Michael Jordan and him telling you've got a sweet jump shot, you know what I'm saying. So he pushes you and pushes you to the edge. Just when you think you're about to fall off and you catch your balance, he just shoves you off and says all right, now fly. So, you know, he's got a short amount of time to find somebody to win this, you know, big prize and he accepts, you know, the higher standard and, you know, I take that even with my, my personal life, with my family and now my new wife, you know what I'm saying. If I keep a level of high standards, you know, I can achieve whatever I want."
